My wife had a conference in Denver, so I tagged along. A colleague of hers, who grew up in Boulder, took us to the Red Lion Restaurant (not associated with the hotel chain), just outside Boulder in Boulder Canyon. Their specialty is wild game. On the friend’s suggestion, three of us ordered the Steak Diane, an 8-oz. seasoned beef tenderloin steak cooked with mushrooms, butter, sour cream and Madeira sauce, then flambéed table-side, definitely not for the diet-conscious, but oh-so-good! Other than consuming it as a cut of prime rib, this would be my second choice for a tenderloin preparation. But not too often, mind you.
